There’s nothing better than a warm bowl of homemade soup on a cold dreary day. My sister, Elizabeth, recently gave me. Madhur Jaffrey’s World Vegetarian cookbook & I decided to try making the Madras curried tomato soup this afternoon for lunch. I didn’t have all the ingredients so I had to improvise a bit but I was quite pleased with the result. Delicious! I paired it with a goat cheese quesadilla. As my soup simmered on the stove, I was able to enjoy the aroma. When the soup was ready, I ladled it into a favorite bowl and savored each spoonful.
