Diabetes Self-Management Class

The Texas A&M Health Science Center Coastal Bend Health Education Center offers a diabetes self-management class, recognized by the American Diabetes Association, which gives individuals an overview of diabetes and educates them on blood glucose monitoring, carbohydrate counting, meal planning, medication and insulin administration, the benefits of exercising, and the importance of preventing diabetes complications. This class is for individuals diagnosed with type 1 and type 2 diabetes. Expectant mothers-to-be diagnosed with gestational diabetes are also invited to attend and are consulted on an individual basis to meet their specific needs. Classes are held weekly with options that include an eight-hour one-day class, a series of four two-hour classes and classes in Spanish. A Month of Mindful Eating

Introduction to Mindful Eating
Thursdays (April 9th, 16th, 23rd, 30th), 6:00-7:15pm

During this weekly class, we will explore how cultivating self-compassion, making mindful food choices, and slowing down and savoring your favorite foods can transform your relationship with food. You will learn strategies for tuning into your body to gauge your true hunger and to guide you in choosing when, what and how much you eat. These simple but powerful tools can help to curb mindless eating and manage cravings and overeating.  Dr. Theresa Sharpe is a psychologist with specialized training in mindful eating.  

Introduction to Mindful Cooking
Saturday, April 18th, 3:00-5:00pm, Investment: $25
Saturday, May 2nd, 3:00-5:00pm Investment: $25
Fee includes food and one meal ($40 for both classes)

Learn how to prepare healthy meals and gain knowledge of meal planning, shopping on a budget and smart portions. Hands-on experience is key to confidence in the kitchen.  The first class will concentrate on kitchen skills and food preparation.  You will learn how to make homemade salad dressings, yummy snacks and a gourmet meal.   The second class will expand and reinforce cooking skills and explore options for a full plate and portions.  Planning and presentation is a learned art form and can be simplified.   During these hands- on classes,  you will participate in preparing different dishes and then share a mindful meal with your instructors and classmates.   Choose to attend one or both of these cooking classes taught by David Nuss and Nancy Roberts.   Chef Dave is a Culinary Educator for the Food Bank, and was trained at the Natural Gourmet Institute of NYC.  Nancy Roberts is  a self-taught foodie and yoga instructor.

Mindful Cooking

There’s nothing better than a warm bowl of homemade soup on a cold dreary day.  My sister, Elizabeth, recently gave me. Madhur Jaffrey’s World Vegetarian cookbook & I  decided to try making the Madras curried tomato soup this afternoon for lunch.  I didn’t have all the ingredients so I had to improvise a bit but I was quite pleased with the result.   Delicious!  I paired it with a goat cheese quesadilla.    As my soup simmered on the stove,  I was able to enjoy the aroma.   When the soup was ready, I ladled it into a favorite bowl  and savored each spoonful.  When I was finished, I felt pleasantly full and satisfied.   Is there a recipe you have been wanting to try?    Making and trying new dishes is one of the joys of mindful eating.   This week, try making a new dish and eating it with full awareness and attention.
